Maui Prime has clearly established itself as the best place in West Maui to procure gourmet foods. The wide selection of gourmet pantry items, wines, prime meats and seafood, and super customer service are only some of the elements that make shopping at Maui Prime a pleasure. Working behind the counters are two honest-to-goodness chefs, Cary Buttons and Will Hawkins. Both are eager to help customers in any way they can; from choosing the best cuts of meat and seafood, to sharing insights on the best methods of preparing everything they sell.

Beluga, Oesetra, Maui Prime has it all

After placing my holiday Turducken and Free Range Organic Turkey order, I asked Chef Will if he would share his favorite holiday side dish recipe with What’s Cooking Maui readers. Knowing you would want something simple but special, he offered the following method of preparing Potatoes Dauphinoise. The famous dish was purportedly created to coaxed young “Dauphine,” later known as King Henry II, to eat his vegetables. As if we’d ever need coaxing to eat potatoes!

Chef Will’s Potatoes Dauphinoise Fit for a King

6-7 peeled potatoes, preferably Yukon Gold
2 pints cream
Salt
One clove crushed garlic

Peel potatoes then slice 1/8 inch thick using a mandoline, if available. It’s important to keep the slices uniform for even cooking.

Do not rinse the potatoes after slicing, although many recipes suggest doing so. This keeps the starch on the potatoes and helps to set the dish.

Pour cream into a bowl and salt to taste. This is your only chance to season the dish so just put in a little salt at a time, tasting after each addition. What’s important- don’t over or under salt.

Crush a clove of garlic and rub it on the bottom and sides of the 9 x 13 baking pan.

Layer the potato slices in the pan evenly and up the sides. Pour the salted cream over the top.

Cover with aluminum foil and bake at 350 degrees, 30 minutes. Remove foil and bake another 15 minutes to brown. Let stand 15 minutes prior to serving for dish to set-up.

Creative add-ons for the dish include sprinkling with Gruyere Cheese before final browning, adding some grated nutmeg to the cream mixture, or including thinly sliced onion with the potatoes. Here’s your chance to be creative. Just be sure to follow the basic instructions for a simple but delicious addition to your holiday table!

If you have any questions, call Maui Prime at 661-4912 and ask one of the knowledgeable team members for tips on everything from which wine to serve with Turducken to which grade caviar to order for New Year’s Eve!

Great new facilities add to Kapalua's beautiful beaches, world-class golf and picturesque bays.

As one of the most beautiful spots on the globe, Kapalua has long been acknowledged for its stunning beaches, world-class golf courses, verdant pineapple fields, picturesque bays and tony accommodations. Kapalua is also home to Hawaii’s largest private nature reserve, Pu‘u Kukui, two Audubon sanctuaries, and both Honolua Bay and Mokule’ia Bay—Hawaii State Marine Life Conservation Districts. In the past few years Kapalua has further developed a slew of new facilities to encourage exploration and greater appreciation of the resort’s natural beauty.

Ambassadors of the Environment

The former tennis garden near Fleming Beach has been transformed into the Ambassadors of the Environment Hale which serves as the starting point for numerous fun environmental awareness programs. Launched last fall in partnership with Kapalua, Ritz-Carlton and Jean-Michael Cousteau’s Ocean Futures Society, AOTE’s programs offers visitors in-depth explorations of the wonders of the natural world. Underwater photography sessions, hikes to the Maunalei Arboretum, and myriad exciting and unique keiki programs lead by trained naturalists, foster a greater appreciation for the world’s interconnectedness. Costs for the program range from $59 – $89.

Ambassadors of the Environment Hale

Kapalua Adventure Center

Have you seen the Unimoggs yet? Ever wonder where they are going? The open-air, all-terrain biodiesel vehicles transport guests from the Adventure Center to Kapalua’s Mountain Outpost. From there intrepid explorers get their kicks on one of the biggest, meanest, baddest zipline tour in North America. The dual system course offers 8 zips carrying adventurers silently above the tree canopy over deep gorges giving a true bird’s eye view without disturbing the natural environment below. Besides the ziplines, the Adventure Center boasts a comprehensive high-ropes challenge course, a four station climbing tower suspension bridge and a thrill swing built for two.

Unimoggs Transport Guests to Adventure

Guests can also hike any of Kapalua’s 100 miles of trails., accessing those at the Mountain Outpost trailhead via the free shuttle that departs five times daily from the Ritz Carlton. Adventure tours range from $45 for the pineapple express tour to $199 for the deluxe zipline tour.

Cafe Kapalua

We’d be remiss if we failed to mention here the wonderful Cafe Kapalua, the perfect spot to start or end your journey into the wilderness areas of the resort. Offering well-priced and delicious breakfast, lunch, snacks, smoothies, coffees and pastries, the unassuming cafe tucked into the back of the Adventure Center next to the outfitters shop across from the golf range, delivers so much more than you’d expect at first glance.

What might elsewhere be ho-hum — huevos rancheros, salads, wraps, sandwiches — are elevated to gourmet status by the use of premium, fresh ingredients gathered from farms across the island, in particular, the Kapalua Farms right down the street. Whatever else has happened in this crazy world of ours over the centuries, we humans have retained the ability to recognize fresh at first bite and seem to appreciate that particular trigger to pleasure more and more. So stop by, enjoy the taste of fresh at Cafe Kapalua. Then, get out there!

Ocean Hiking Trail

One of Kapalua’s simpler pleasures is the Ocean Trail, especially during whale season. Running from Kapalua Bay to Fleming Beach, the path passes by the newly completed Ritz Residences and has been recently upgraded to include a boardwalk over the dunes at Oneloa Bay. It’s stunning, it’s easy and it’s free.

Kapalua's Ocean Trail traverses some of the world's most beautiful scenery.

Golf Practice Course

My favorite Kapalua improvement in recent months is the revamped 3-hole practice range on the former Village Course. Each hole has three different tee boxes and although it’s short and sweet, the course provides ample opportunity to practice skills beyond the range and putting green without committing to a full round. It’s also the perfect place to test your skills after a lesson at the Golf Academy. Check in at the learning center before heading to the course; cost is $25.

Kapalua Golf Learning Center Views

Bocce Ball

There’s good reason Italian’s love the game of Bocce; it’s fun, sociable, and you can drink wine while you do it. For a little taste of la dolce vita in Kapalua, get your pals together under the shaded courts located directly across from the Honolua Store. The glorious views the overlooking the Bay Course will inspire even if your skills are initially lacking. If you’ve never played before, don’t worry. Bocce is a game with a quick learning curve and thus appeals to beginners and aficionados alike. Team members take turns rolling bocce balls as close to the pollina (set ball) as possible — and that’s pretty much it. Good hand eye coordination helps, but anyone can get in on the action. The Villas Registration Center loans out bocce sets at no charge to guests and residents.

Mary Swiger takes the spotlight in the Cool Bars, Hot Bartenders series.

Mary Swiger at Lahaina Grill

Mary Swiger was kind enough to take time from her her very active personal life and busy job as Bar Manager at Lahaina Grill to grant WCM the following interview.

WCM: Mary, it’s pretty well known that you and your co-hosts at the Lahaina Grill bar are primary attractions… along with the food, of course. How do you mange to keep things sizzling night after night?
Mary: It’s pretty easy really. Our bar lends itself to conversation. Most of our guests are locals or return guests so all it takes is a couple of people to start talking and the bar picks up this energy. It’s really fun.

WCM: You’re more than a bar manager. You also serve full gourmet meals at your bar. With all the serving, bussing, pouring, mixing, and special orders, how do you manage it all so seamlessly?
Mary: All of us girls are great multi-taskers. It’s just one of those things that you learn to do over time. Both Annabehl and I have been at Lahaina Grill for over ten years now. Working with the same person for so long makes it really easy. Jessie is relatively new but she already has blended in great.

WCM: What’s a nice girl like you doing in a place like this?
Mary: I love Maui. When I first moved here I fell in love with the island and then I got this job and it was perfect. This doesn’t even feel like a job. It feels more like I’m going to a great party every night. I feel fortunate to have a job I love so much.

WCM: Okay, better put, how did you originally find your way to Lahaina Grill? How long have you been working there?
Mary: I moved to Maui from Las Vegas. I knew our current General Manager, Debbi Fagan, there. She worked at the same restaurant I did in Vegas. She had lived out here for a bit and worked at the Ritz Carlton. She had a contact there who was the General Manager of this restaurant at the time. She said I should go in and apply and that I could use her name as a reference. So, that’s what I did. I got the job here fifteen years ago. Debbi eventually moved back to Maui and she also got a job here. Now she’s the general manager. It’s a small world out there.

WCM: Fill in the blank. If I weren’t the bar manager at Lahaina Grill I’d _______.
Mary: I’d love to be the owner. Seriously, it’s such a great restaurant that I would love to own one just like it. I really love the industry so if I weren’t here at Lahaina Grill tending bar I would probably still be involved in this industry in some way. It’s such a social environment and I love that.

WCM: Lahaina Grill is undoubtedly West Maui’s best place to meet and mingle. How do you make everyone feel so at home at your bar?
Mary: I’m a people person and I think that’s evident when you’re at my bar. At least I hope it is. I really love getting to know people. I’ve met some incredibly interesting people here and become very good friends with lots of them. People are interesting and a bar is a perfect setting to start conversations with people. It’s not like table side service. It’s a little more casual so it is easier to engage the guests.

WCM: I happen to know firsthand you’ve watched the evolution of many relationships from your position behind the bar; from heady first date to heart aching split. Do you offer advice to the lovelorn?
Mary: Hmmm. I listen and offer advice if I’m asked. I can’t seem to figure that department out for myself, let alone figure it out for someone else, but, sure, I give an opinion if asked. I mostly listen though. That’s all most of us want anyway; a sounding board and someone to listen.

WCM: How do you handle prickly situations?
Mary: Thankfully we don’t get many of those here. I try to be as nice as possible. It’s hard to be nasty to someone who is being really nice to you so that is how I try to manage it. I try to make it difficult for them to stay “prickly”. If, however, they are bent on staying in a difficult mood, at that point I turn the situation over to Debbi, the General Manager. She’s excellent at dealing with difficult situations. That way I can get back to doing my job.

WCM: What’s your favorite libation to serve? To enjoy after hours? To toss down the drain?
Mary: I’m not much of a drinker but I love a good glass of wine from time to time. I also love a great Lemon Drop Cocktail. The only trouble with them is they don’t taste like alcohol so they sneak up on me. I live in Makawao so I never have after hours drinks. It’s too far to drive after drinking. As far as what would I toss down the drain, ask anyone of my co-workers and they will all know the answer to this one. Mojitos! I hate that cocktail. I hate making them more than anything. Thankfully, Annabehl and Jessie don’t mind at all.

WCM: Another fill in the blanks: If I never see another _____________ in my life it will be too soon.
Mary: Mojito!!

WCM: What do you love most about your job?
Mary: The social aspect of it. It’s like a party every night at Lahaina Grill. Some nights are just so fun it feels almost sinful to get paid to be there. We really do have a wonderful clientele at Lahaina Grill — really amazing people. It’s so much fun to look out the window and see a returning guest about to walk in the restaurant. You just know it’s going to be a fun night. It’s like an old friend returning. Annabehl and I have known some guests for over ten years. That’s a long time to know someone and we’ve developed great friendships. We know a lot about them and they know a lot about us. We can talk about things just like old friends do. How are the kids? How’s the new job? How’s the remodel coming along? It’s the same for them. They ask us about our lives as well. And then there are the new guests; always an opportunity to get to know someone else. It really is great fun.

WCM: It’s obvious you love what you do. Thanks so much for sharing with WCM readers.
Mary: This was fun! See you next weekend at Lahaina Grill.

Lahaina Grill, I'O, Mala, Maui Tacos and more...

Lahaina Grill shows the love on Mondays in May by offering locals 50% off any of their fabulous entrees. Try the rack of lamb, firecracker shrimp, steak Jolene or, do as we did last night and surrender yourself to the sublime delight of the Opakapaka special, after which you may swear off red meat in favor of such soul-satisfying seafood. Like most things on LG’s menu, it is truly amazing.

I`O’s continues to woo kama`aina by offering 50% off entrees every night, all night. Check out the menus at www.iomaui.com. Remember what your mama told you –get while the getting’s good.

Mala extends their 50% all food offer for kama`aina from 8-10 p.m. nightly at the Lahaina location only. Visit www.malaoceantavern.com for more information.

Here’s a $5 footlong for ya. Maui Tacos, another local favorite by Mark Ellman and gang, invites anyone to enjoy any and all surf burritos for only $5. Okay, not quite any burrito since the steak and island fish varieties will set you back another $.99. Still a steal.

Online Ballots for Best of Maui, 2009

Show support for your favorite restaurants (or gallery/dj/politico/yoga teacher/MMS fighter) by voting in the Maui Time Weekly Best of Maui. You must first register then vote for at least 40 categories for your vote to count. This, presumably, will halt ballot stuffing and cheating. Voting ends May 20th so stand up and be counted soon.

Heard Through the Coconut Wireless

Drew, of Yen’s Salon at 910 Honoapi`ilani Hwy, at West Maui Center in Lahaina, can’t stop talking about Betty’s Café at 505 Front Street. Though I’ve not yet had the pleasure of dining there, Drew tells me they have some spectacular lobster specials.

Gather your own insider information while enjoying serious fun and socializing beyond haircut, shave, wax or the island’s best prices on a manicure/pedicure by Vee, Yen, Amy and gang. Walk-ins are welcomed but call 667-9188 to make an appointment.
