Scotch Paired with Dinner – Shiver me Glenlivet! March 28, Grand Wailea

The Grand Wailea presents the next of their Signature “Toast” Series of fine dining events Monday, March 28, 2011. Prepare yourself for a four-course Glenlivet Scotch matched dinner and (afterward) a cigar tasting.

Humu Executive Chef Isaac Bancaco has gathered up his enormous creativity to map out a menu that kicks off with Foie Gras and Unagi “peanut butter and jelly” (actually mac nut and pineapple-poha jam) paired with a 12 year Glenlivet. Since a Scotch dinner holds appeal for the muscle-bound and/or manly men you know, it must necessarily include either Roasted Lamb and Spiny Lobster Wellington, right?  Here we have both, along with some charred Brussels sprouts with the lobster and Thai Basil Mole on the Lamb.  I’m blushing at the potential pleasure of it all.

The Scotch gets older as the courses progress, a choice that could be questioned in general. But since they are meant as pairings to the food, as each course becomes more full-bodied and satisfying, so too should the drink. Hubba, hubba.

The stupendous meal closes with a 21 year old Scotch served with white chocolate honey mousse with cherry compote and apple streudel – and a cigar if you like – in a secluded place far from where anyone will dream of complaining. (What we all dream of now and then.)
