`Aipono Award Dinner – David Paul’s and Cakebread

Let famed vintner Dennis Cakebread and award-winning Chef David Paul Johnson educate your tastebuds on a tour of Napa’s best bottles. This culinary combo is not to be missed!

~Course One~
Goat cheese… torte with frisée and endive salad with honey-poha vinaigrette
Sauvignon Blanc, 2008

~Course Two~
Pan seared Halibut with Miyaki Oyster, fennel, celery, and Yukon Gold chowder, smoked extra virgin olive oil, pomme gaufrette
Chardonnay, 2008

~Palate Cleanser~
Champagne sorbet

~Course Three~
Crisp sweet breads with braised veal cheeks, smoked sweet potato gnocchi, cabernet reduction

~Course Four~
Chocolate Gâteau “Baked Alaska”, Zinfandel reduction, black cocoa infusion
Zinfandel, Red Hills, Lake County California, 2006

As with all ‘Aipono events, proceeds from this dinner benefit Maui Culinary Academy. For every seat purchased, a $25.00 contribution will be given to the school. In addition, two students will have the opportunity to apprentice with the chef in the kitchen.

Reception at 6:15 p.m., followed by dinner.

$85 per person, tax and tip not included.

Seating is limited and reservations are required. Be sure to book early, as this is sure to sell out!
