Nothing says summer in Maui like beautiful, succulent, sweet mangos and it looks as if Mother Nature has graced Maui with another bumper crop this year. Last year I couldn’t eat enough of the fruit while it was fresh, plentiful, and in season. One easy way to add more servings to your daily diet is to crank up the blender and enjoy a few mango li hing mui margaritas (or two!) this weekend.
Mango Li Hing Mui Margarita
- 1 1/2 ounces tequila
- 1/2-ounce Cointreau
- 1-ounce lime juice
- 1 1/2 ounces sweet and sour mix
- 1/2-ounce mango puree
- 2 teaspoons li hing mui powder
Fill a blender with ice, add all the ingredients, except the powder, and blend. Rim a glass with li hing mui powder and serve immediately and enjoy the best margarita on earth.
So ono, Mangos are currently available at local markets for about $3/lb. If you’re lucky and have a friend with a mango tree they will most likely share or since there’s usually more than enough to go around. I’m always astounded by the number of mangos one large tree will produce.
Remember to stockpile a few in the freezer for later use, since they make great smoothies, too!
