<p>When I walked into Merriman’s last week it reminded me of a symphony orchestrated by the powers that be. How else would you be able to sit right at the mouth of God on the Kapalua Bay watching the sun go down? I missed the sunset, but grinning patrons all around me told us that a whale breached at the exact moment the sun, skinny-dipped into the distant sea. Everything from the drive down toward the entrance, and the complimentary valet parking, walking in and being greeted by a full wine room, and two nice hostesses, was all music in the making; even the glass breaking in the background was like two cymbals colliding together to begin the overture.</p>
<p>We sat at the edge of the lanai, over looking a number of attractions. First, of course are the stunning Ocean Views. Second, was the open air seating right on the water, lounges and a few fire pits makes it perfect for there wine bar, a perfect spot to un… I won’t say it, that’s too easy, but it is a nice place to relax.</p>
<p>We had a bird’s eye view, and the whiners seemed to be enjoying themselves, as will I next time. Speaking of birds, a few were enjoying the music of Maui as well and had front row seats in Merriman’s herb garden, right below us.</p>
<p>This was the first clue that we may be in for a treat, fresh herbs. Merriman’s product is all locally grown, picked and prepared here in Maui, you wont find a fresher meal unless you ate it right from the sea itself. Here’s the line up:</p>
<p>If you can’t decide on a appetizer, go with the Pupu Platter and try a little of each, you’ll enjoy all the special sauces, and the homemade Kimche, it come out on a plate separated in quarters and each quarter holds a few selections, very nice.<br />

<li>Goat cheese and strawberries with Kula onion wrapped in Philo dough</li>

<li>Deep fried fritter macadamian nut shrimp with a pablamo sauce</li>

<p>Next was the Red Pepper Soup, at a glance this was deceiving, I never knew those little tomatoes on top held so much power over my taste buds! Red pepper soup with baby tomatoes topped with basil and oregano (put the last two in your mouth at once for a taste explosion)</p>
<p>They had a Special salad featuring again all the local herbs and accoutrements, and listening to our server explain it was reminiscent of a trumpet solo, it all sounded amazing, but I have know idea what was being played.</p>

But again I was wooed by the description given. Sliced lamb on an eggplant and potato mash with a tomato chutney on top, and yes even the Lamb is Maui grown.</p>
<p>The Misoyaki butterfish melts in your mouth and I have only had one better which for now will remain a secret. Merriman’s is a spot you’ll definitely have to try a few times, because of the array of choices; you’ll never fit it into single seating. I for one can’t wait to go back and try there homemade Ginger Beer that they make on premise and goes great with a little Gin or Vodka, I stole a sip from my close friend.</p>
<p>Now the grand finally or crescendo, as usual, is dessert, and with a glance not wanting to miss a single note, I verbally lunged for the flaming pineapple, but my voice must have been lost in the laughter and conversation surrounding us. Our waitress was pulling the old Houdini, and seemed to disappear every time I wanted to order, was this one instrument out of tune? I pondered, and thought what a conductor might feel like if during his grand finale, the string section goes flat…</p>
<p>When she appeared she talked me out of the flaming pineapple extravaganza for apparently her favorite, Malasadas with dipping sauce. I thought to myself, &#8220;If she’s talking me out of the fiery fruit finale, these malasadas must be Xanadu.</p>

<p>Then out came a brown paper sack. My first thought was to eat it in the car or at home, but I looked around and saw that I wasn’t the only kid bringing his lunch to school. Everyone was ripping through the paper like it was Christmas morning, and the present, one of the best malasadas, I’ve ever tasted. Hold the pineapple, I’ll have a malasada.</p>

<p>Do you know what is most annoying about the <em>Lifestyles of the Rich and Famous</em> shows on TV? Nothing they show you is obtainable unless you hit the lottery. You’re not going to stay in a hotel room for $15,0000 a night, you’re not going to hire a butler to shop for you, book a private chef to prepare your meals, or pay a pool attendant to peel you a grape. However, you can mingle amid the sweet air of the rich if you know where to go and when.</p>
<p><em><strong>Kapalua </strong></em>- the name alone evokes visions of  movie stars and professional athletes. A vacation spot for many exclusive types who like the peace and quiet of West Maui while getting away from the touristy areas that dot the coast, Kapalua also feature some of the best restaurants on island that cater to a discriminating clientele. As you’d expect they  carry a hefty price tag that typically keeps riff-raff out.</p>
<p>Ah, but that hasn&#8217;t stopped me from managing  to find my way into three famed hot spots that feature out of this world Happy Hour (drinks and food) far beyond the usual pau hana pickings.  Visit any of the Kapalua restaurants noted here during their value menu hours and impersonate a big spender, impress a hot date, or simply revel in the pleasures of life like the rich and famous.</p>
<h2>Ritz Carlton: Kai Sushi</h2>

<p>Bar seating is available as well as dining in the comforts of a sumptuous table with view. Afterward, relax in the lobby and enjoy the live music while watching the stars from the lanai.</p>
<p>Kai Sushi has stiff competition, seeing that the popular Sansei is right next door, but that only makes it one of the hardest challenges you&#8217;ll face -  deciding which is best. Simply being at the Ritz Carlton implies you’re somebody special, since their operating mantra is “ladies and gentleman serving ladies and gentleman,&#8221;  an automatic vote in Kai&#8217;s favor. The ambiance is elegant; the clientele equally gorgeous.</p>
<p>Try anything on the menu, from the fresh Ahi to one of the many specialty rolls. At full price it’s just standard that dinner at the Ritz  equals a very expensive evening, however at half off it is affordable and accessible for everyone. Bring a date, or just meet up with friends; it&#8217;s sure to impress as it did my “mother-in-law to be” when she was in town. Dining at Kai gave me instant worthiness and mum no longer questioned whether or not I was right for her daughter&#8230; until I ordered the 3rd round of sake bombs!</p>

<p>A relaxing, upscale atmosphere that features live music both nights. You can indulge in complete meals or merely lounge with pupus at half off, so sample everything!</p>
<p>Stay up in the bar area and enjoy the musical styling of their jazz trio who play on Fridays. On Saturday they have the nice local Jawaiian music being strummed on the ukulele. You get all this, plus great bartenders, while enjoying plate after plate of half-off pupus along with a few specialty items. One evening I topped my record and had four helpings of the chicken sate with peanut dipping sauce. At around $7 a plate, you couldn’t make it at home for less.</p>
<p>There’s a large bar and lounge area and plenty of seating outside where you feel the cool breezes coming through Kapalua and with the money you saved, you may even stay for a dessert or two.</p>
<p>It’s the perfect time to try all the pupus you would otherwise shy away from on the last of your vacation dollars.  Whether wontons, the sate trio of steak, chicken and shrimp, or the very stylish and excellent brie platter, everything on the extensive bar menu is super tasty with options sure to appeal to everyone on the guest list, including the ultra finicky…. Future Mom-in-law!</p>

<p>A <em>don’t miss</em> spot for sushi; ask anyone where to get the best sushi and you’ll always hear the name “Sansei’s.”</p>
<p>Get there early on discount days, because there will be a line. On Thursday evening after 10pm enjoy Karaoke along with the same half off special which is always a great time.</p>
<p>If you&#8217;re driving toward the Ritz Carlton, Sansei will be the place with a line out the door, and for good reason. Everything on the menu is amazing; from Caterpillar Rolls to Sliced Steak with Udon noodles.</p>
<p>It&#8217;s a classic dilemma: though it’s hard to resist screaming the name from the rooftops, the joy becomes bittersweet when you&#8217;re required to wait a little longer each week because the new fans expand the long line. Once bitten, you, too are sure to fall in love with the food, the atmosphere, and sheer fun you experience from the moment you arrive to the moment you feast your eyes on the colorful, <em>fresh as it gets</em> rolls.</p>
<p>Open the bill and see the prices slashed in half &#8212; now fall even deeper in love. It’s the only time I’ve seen diners on Maui do a double and triple take on their check because they expected to pay <em>more</em>.</p>
<p>&#8220;This can’t be right, could it?&#8221; He puts on his readers. &#8220;Honey, don’t make any plans for  Sunday or Thursday at 5:30!”<br />
“Next week?” she asks.<br />
“Every week!” he assures.<br />
Smart guy.</p>

<p>There’s no better place for getting out of dodge and falling into love in Kaanapali than Basil Tomatoes.</p>
<p>It’s hard to talk about because I want to keep it a secret, but it’s behind the Kaanapali Golf Course, and adjacent to the Royal Lahaina Resort. Not exactly where you’d expect to find old <em>Italia, </em>but there it is.</p>

<p>As the music plays in the background, Frank Sinatra and his cohorts remind you to be a gentleman to your lady friend. Stop at the bar and grab a drink before being seated and try and get a booth overlooking the golf course. Just beyond the greens, catch sight of Black Rock jetting out of the ocean. Basil Tomatoes is only open for four hours from 5-9 p.m. during the sunset show, so make reservations if you plan to arrive after six.</p>

<p>Now seated in a tall private booth you can get a little closer and enjoy some vino. Out comes the tomatoes topped with basil; looks like you’re in the right place!</p>

<p><strong>Basil Tomatoes House Salad, </strong><em>fresh vine-ripened Olowalu Nui tomatoes, buffalo mozzarella cheese, Maui onions and fresh basil. Balsamic vinegar and extra virgin olive oil. $14.00</em></p>
<p>Enjoyment coupled with romance is the theme of this place. Take a few hours off from the minutia of the world. Let’s start with some of the recommended appetizers.</p>
<p><strong>The Famous Stuffed Artichoke</strong><em>, fresh steamed and stuffed with fresh garlic, mozzarella, ricotta, parmesan and gorgonzola cheese. $14.50</em></p>

<p><strong>Carpaccio</strong><em>, thin slices of raw filet mignon arrayed on crisp Kula greens, topped with parmesan and a drizzle of our vinaigrette. $18.00</em></p>

<p><strong>Bruschetta, </strong><em>with garlic, Olowalu Nui tomatoes, olive oil and basil. $12.00</em></p>
<p>This time around we let our waiter Andrew take care of us and he held nothing back with an entourage of entrees. During which he talked about how the restaurant hosts a number of the resorts nearby, and offers an experience unparalleled by others, with a black tie feel and fine dining experience, though you won’t feel out of place sporting a Tommy Bahama and slippers.</p>
<p>The surprise of the day was the <strong>Calamari Steak Picatta</strong>. The Manager pounds the calamari steak in the morning, at lunch, and at 5:00 pm. The calamari is so tender you don&#8217;t even need a knife. <em>Sautéed with lemon butter, capers, fresh garlic and white wine, served with linguine $30.00, Chicken Picatta $28.50: Veal Picatta $32.00 </em></p>

<p><strong>Lasagna</strong><em>, with sheets of homemade pasta layered with beef, pork, Italian sausage, ricotta cheese, the homemade pomodoro sauce, baked with mozzarella and parmesan cheese, $26.00</em></p>
<p>And can’t forget a side of straight <strong>Penne Bolognese with Meatball, </strong><em>the classic tomato &amp; meat sauce with beef, pork, Italian sausage and fennel, $26.00.</em><strong> </strong></p>
<p>I’ve never been into sweets so I typically skip dessert, but Andrew wouldn’t have it, as he brought <strong>Tiramisu</strong>, <em>an Italian classic made with espresso and brandy soaked ladyfingers, layered between rich mascarpone and sprinkled with cocoa, $12.00.</em></p>

<p>Don’t miss the <strong>Bananas Foster</strong>, the House Specialty. <em>Macadamia Nut Ice Cream covered with sliced bananas caramelized in brandy, butter and brown sugar, $14.00. </em>From the reaction of my dining companion it’s a little like romance on a plate.</p>
<p>The atmosphere makes you feel a side of Maui that sometimes gets lost among all the activities, sun bathing, and mai tai’s; the abiding sense of love and connection with the one you’re with.</p>
<p>Some people wait their entire life to come out to Maui just once, if that’s the case for you, don’t leave without trying this spot. If you do live here, this should be a date night standard.</p>
<p>That way you won’t end up like the couple dining across from us: such a romantic environment and they stared blankly at one another without speaking. Had they been together forever? Was there’s nothing left to say, the mystery gone, all the questions answered? Did they even look at Black Rock, the tiki torches, the glorious sunset? Maybe it was just a bad day because man, if you aren’t feeling romantic at Basil Tomato’s well…</p>
<p>Since I don’t want to end up that way, I’ll continue to take some time over wine at romantic Italian restaurants like this one.</p>

<p>Voted best new restaurant in Maui by Maui times, Mai Tai lounge is reminiscent of an old fashioned speakeasy. You could walk by it a hundred times and not know it was there,  making it a great place to meet friends and  enjoy ocean front dining on Front Street without the bombardment of tourists and Bubba Gump-style fanfare.</p>
<p>Located directly on the ocean next to Kimo’s in downtown Lahaina, you walk through a jewelry store to get to the entrance of the restaurant, which is advantageous for local residents looking to go slightly off the radar or slip in for a beverage without being spotted by paparazzi.</p>
<p><em>I wonder what drink Mai Tai Lounge might be famous for.</em></p>

<p>Maui times awarded the Mai Tai Lounge purveyors of the <strong>Best Mai Tai</strong> two years running. That, coupled with the only rooftop dining in Maui, makes this restaurant a must see for visitors, and a “must frequent” for those who live here. Whether stopping by for a cocktail, dining on the first floor, or watching the sunset fall over Lanai while catching a breech or two from our annual visitors, Da Whales, make sure to stop in and say hi to Isabella the bartender. She makes a slamming margarita, and can mix a Mai Tai in her sleep. You’ll also be assured your experience is a memorable one by either Michel Roy, the managing partner, or Fernando Canitrot, dining manager.</p>
<p>On my latest visit, as we walked through the jewelry store and I made a mental note not to drink too much lest my dinner bill come with an added expense on the way out. From there we climbed the stairs to the dining room with the greatest view on Maui.</p>

<p>With a group of three or more I recommend starting out with the Flaming Hibachi Pupu Platter, which is a complete sampler of some of their other aps (yes, there’s an ap for that!)  Among the mixture, the Kealoha’s Baby Back Ribs, stood out above all. Slow cooked, tender pork ribs glazed with their secret island bbq sauce, it’s one of the most popular dishes on the entrée menu as well. The Chicken Satay is a nice staple accompanied with three dipping sauces which multi task when used on the Crab Rangoon style stuffed wontons and Shanghai Rolls.</p>
<p>We also dabbled in the lobster quesadilla. With my Latin background and extensive <em>mamacita</em> style cooking experience, although I’d never thought of stuffing lobster into a tortilla before, now that I’ve tried it I feel my youth was sorely lacking since it wasn’t spent eating things this deliscioso. And to think for awhile there I thought I’d had a fine childhood!</p>

<p>Even if it’s for sheer presentation wow-value, order the Ahi Rainbow Tower. Fresh, glistening Ahi that’s been prepared poke style is layered with rice, mango, pineapple and avocado, topped with masago and served with wonton chips and a wasabi ginger drizzle. I know Snoop Dogg would try it, Fo shizzle. The beautiful Ahi tower quickly came crumbling down as our clean-up crew was fast at hand to clear the plate. Whomp.</p>
<p>For those wanting a quick bite while catching a few rays, sit upstairs and order the Riki Tiki Tacos, enough to abate your hunger without weighing you down. Your choice of fillings includes Kalua pork or  Sauteed Mahi Mahi. For those in no hurry, try the tropical grilled chicken salad construction of tender, sliced chicken breast with mangos, avocados and feta atop Napa cabbage and greens, with a creamy papaya seed dressing and peanut sauce drizzle; a good way to gear up for a day at the beach.</p>

<p>As for main courses you’ll have a lot to choose from Island favorites such as shrimp or lobster enchiladas, a large order of the baby back ribs mentioned earlier or a filet for those shady meat and potato characters.</p>
<p>Along with a late-night dining menu, music and dancing, Mai Tai Lounge is fast becoming one of Maui’s top hang outs, offering a little something for everyone. Just try it &#8211; have a drink with a significant other on the rooftop, as the sun goes down. Romance will ensue, I assure you. Or sit downstairs on the water and watch the tiki torches catch fish off their flickering flame. You’ll be saying to yourself, “We should do this more often!”</p>

<p>Settled high on the Kapalua hillside at the Plantation Golf Course sits the aptly named Plantation House, one of my favorite restaurants for breakfast. Overlooking the famed 18<sup>th</sup> hole you can practically feel the excitement of every pro who ever made this approach then putted out to win.</p>
<p>The beautiful setting, both inside and out, makes a trip to the Plantation House a great way to reward friends, family and yourself for traveling all this way to enjoy the glories of the tropical paradise we are fortunate to experience every day. Enjoy it all, the views, the grinds and price tag that won’t leave you eating coconuts the rest of the week.</p>
<p>As you drive up through the hills of Kapalua, toward the eatery and pro shop, you feel a world away from the sunny hustle and bustle of Lahaina and Kaanapali. Visiting last week with my mom, the morning sky above the hills had the hue of a Champagne Bellini as we rounded the corner into the entrance. Walking in, past the golf memorabilia, the pictures of past champions add a rich sense of history to the legendary golf course above which you will dine. One right turn down the hallway, you’ll be among golf fanatics looking through the pro shop, but make the left turn and you’ll be greeted kindly by the host or hostess eager to seat you for an amazing breakfast experience.</p>
<p>As you take in the views and feel the breezes of North Maui, I recommend ordering the:</p>
<p><strong>Maui Gold Pineapple</strong><br />
Cinnamon sour cream sauce   5.50</p>
<p><strong>Local Papaya Half</strong><br />
Lime wedge   4.50</p>
<p>Locally grown is a healthy way to start your day and the sweetness of the fruit will give you an insight on why some of us who came here once on vacation, never left. The Plantation House menu has something for everyone, even hard to please, finicky eaters (aka mom). I love their Eggs Benedict menu with options from the classic to the nouvelle:</p>

<p>An Ahi Benedict with wasabi hollandaise is as close as you can get to sushi in the morning. My mom stuck with the safe option, as always, and ordered the spinach omelet prepared with three eggs, cheese, onions and spinach. I’ve never had it personally but I know it’s good, because my mom, who only eats one or two bites of any meal before pushing the plate away from her, was half way into that omelet before the waitress brought our second Bloody Mary &#8211; another plantation staple. Plantation House Bloody Mary’s are well-known as the perfect hair of the dog after a big night of dancing in Lahaina. In fact, Plantation House brunch is well-known as one of the best, acknowledged regularly by local press and readers’ polls.</p>
<p>Granted, breakfast isn’t the most challenging or exotic of meals, but if you’ve ever had dry eggs, soggy toast, sour pineapple, or blah bloodies, you know it’s harder than it looks to make simple ingredients taste excellent.</p>
<p>Besides doing a superb job in the kitchen, Plantation House has the added wow factor of beautiful views of Molokai off in the distance and the sight of an occasional whale breach. Then there is the unique spectacle of golfers hitting their second or third shot onto the eighteenth green, perhaps imagining what it would be like if the grandstands were filled with cheering crowds as they tip their cap, and walk in the footprints of the masters before them.</p>
<p>To recap, my favorite breakfast repertoire:</p>

			<content:encoded><![CDATA[<p>The day was shaping up when she agreed to be my pseudo-date for Friday evening’s restaurant review of <a href="http://www.whatscookingmaui.com/featured/tia-juanas-kaanapali-maui/">Tia Juana’s,</a> the New Mexican joint in Ka’anapali. I was newly single, so I needed to be strategic when going out and about. Because we live on an island, everything you do or say is heard through the coconut wireless (a term I dislike almost as much as the saying, “You don’t lose your girlfriend, just your turn.”)</p>

<p>Like it or not, the coconut wireless is best described as anyone on the island that loves to share information about anything and everything having to do with anything and everything, besides themselves. It’s what Access Hollywood and the E Channel is based on. That being said, you need to always consider the company you carry and the actions you take when you’re in public. This includes but is not limited to the places you frequent, whom you’re with, and why you’re there &#8211; because everything will be reported through this coconut palm pilot to everyone else whether you like it or not.</p>
<p>Running into someone you didn&#8217;t expect to and saying, “Please don’t tell anyone you saw me here,” will be posted on Facebook before you’ve even been seated. You might get caught in awkward situations from time to time, like running into an ex while you’re on a first date with someone new, or having a nice meal with a potential friend with benefits only to find your server is a friend whose benefits were recently discontinued. Mayday, Mayday!</p>
<p>However, those who are savvy learn to use this to their advantage. Without giving out all my secrets just yet, one rule I will share is: If you’re going to go out, be seen as someone of value by keeping company with people who have values. “I saw your old boy or girlfriend out last night, he/she looks like their doing great,” sounds a lot better than, “Wow, I saw your old flame and what a mess!” which is why I was happy walk into TJ’s the other night with a beautiful girl on my arm.</p>

<p>We headed for the bar and although I was on the job and had to have my wits about me to key into the vibe of the place, I still had the task of being a good date, even if it was only as friends. After all, most relationships start by meeting someone through a friend. So you’re always interviewing for a position. Hey, if you can&#8217;t be with the one you’re with, then hope they can hook you up with their hot friends. Referral biz, I call it.</p>
<p>So there we are, enjoying each others&#8217; company, wanting all the sweet nothings to mean something, sipping on margaritas, laughing, making me think this date, real or not, is going swimmingly. Then the bartender begins showing some interest in my date, or friend, or whatever. He doesn’t know what we are!</p>
<p>Out of common courtesy, one could simply serve the drinks and move on until my glass is empty, but of course this is Maui and here we know everybody and we talk to everybody; we’re lovably open and we share our good vibes with all. When it comes to beautiful women, there will always be a lot of men vying for their attention. I know from experience that it’s best not to let them even get a foot in the door, especially while you are on a date with said woman.</p>
<p>So you need to learn tactics to defend against these situations. This is relationship warfare. On the outside it may look like eyes filled with stars and a head full of fireworks when smiles appear between two people. But every action, subconscious or not, either deepens your bond or tears the threads of that comfortable sweater we long to wear on those cold, lonely nights. This man was obviously trying to knit his way into my pseudo-date’s clothing collection and I had to act fast – and smart.</p>

<p>Any action or reaction could either set me up for a great night or a, “he’s just a friend,” declaration from my date when the bartender next whispered in her ear. Thoughts ran through my head of past relationships where in similar situations things had gone awry by reacting the wrong way.</p>
<p>I looked at the bartender, my poker face was smiling, calculating, sizing him up. Knowing my own physical limitations, fighting wouldn&#8217;t work. Plus, it would be a little weird seeing how this was the first time my friend and I had spent any time alone outside of work. There were other cute girls in the immediate vicinity, I could work the reverse jealousy angle, but if she does like me and has no interest in the barman, then my goose is cooked. Just then my only martial arts training that I ever had kicked in.</p>
<p>Years ago I was browsing a bookstore in Southern California, and came across a very foreign section, “Fitness.” I pulled a random book from the shelf, “Aikido, in everyday life. Giving in to get what you want.” I flipped to a page and it read, “When an attacker comes at you, it is best to use their own energy against them and to save your own.”</p>
<p>Applied to the matter at hand, I realized the only energy my opponent was using were his words. I thought for an instant &#8212; I know if I talk enough I can screw anything up! Maybe he’ll do the same!</p>
<p>I excused myself to the restroom and said, as my hand kissed my friend’s lower back, “I’ll let you two catch up a little.”</p>
<p>I could see the questions running through her mind, “Why is this guy not threatened by another man’s advances on me? Pseudo date or not? Does he like another girl? Or is he just not that into me?”</p>

At that moment, I noticed the bartender making his way over to say something.</span></span></p>

&#8220;Did you want to say goodbye?&#8221; I asked her, motioning back up the stairs toward the perpetrator.<br />
&#8220;No, he&#8217;s not really my type,&#8221; she smiled.<br />
&#8220;Am I your type?&#8221; I asked. I figured I may as well see where I stood, the friend category is only a handshake away.<br />
&#8220;We&#8217;ll see&#8230; when are we going out again?&#8221;<br />
&#8220;I have to do a review on the new noodle place next week.&#8221;</span></span></p>

<p>Finding a good bartender is like finding a good mechanic; once you do, you never want to go to anyone else.</p>
<p>You stop by their station to see if they’re in.</p>

<p>They can quickly diagnose the problem and give you a tune up to feel somewhat idle.</p>
<p>Whether it’s after a hard day at the office, to mend an ailing heart, or simply to refuel, your favorite mechanic makes sure you get to your next stop.</p>
<p>What we all love about our favorite bartenders are the little extras that come with our frequent visits. I’d like to say it’s all about the friendly smiles and momentary friendship but alas, it also has to do with an extra shot or beer just because you’re not some stranger; it’s you!</p>

<p>There’s something about walking into a bar or restaurant, whether you’re with someone special or a good friend, that makes you feel significant when you are acknowledged as you pull up a stool and hear a, “How’s it been Kale? Welcome back,” followed by a warm handshake.</p>
<p>A greeting like that feels even better when you walk in all alone feeling more than a little uncomfortable amongst leering strangers who are already saddled up and have ridden through a few drinks. Your social credibility goes up a few notches if the bar keep knows you, definitely softening the leer into mere curious stares, which eventually give way to acceptance within the ranks.</p>
<p>Earning your wings all starts with the first visit and the first conversation, plus you need to be somewhat loyal, and offer an above and beyond gratuity, which will send you above and beyond a normal experience. You will know you’ve made it into the left over beer ring of trust, when someone utters those four words we all long to hear, “ This one’s on me.”</p>
<p>Here are the tactics necessary to make that e-lationship strong right from the beginning along with some signals that suggest you‘re on the right track.</p>
<ol>
<li>Don’t      get wasted your first time in. Show that you can handle your liquor      respectably. There are no free drinks when you’re getting cut off.</li>
<li>Get      the name of the bartender you like and connect with and more importantly,      use it. Keep the conversation impersonal; don’t gossip, remember it’s a      small island and easy to get voted off.</li>
<li>On the      next visit come with friends, bring in new business &#8212; in other words,      bring something to the table &#8212; or the bar in this case. We all live on      the almighty dollar, so do your part and spend some money at the places      you want to see stick around.</li>
<li>The      tip has to make a statement. It has to relay the message that you <em><strong>care      and appreciate their service</strong></em> without having to actually say it,      which would be a little odd. Then again, a verbal tip such as, “You’re so      great!” or “You do such a good job!” without the appropriate financial      backing is tantamount to an amazing date with no kiss at the end. Your tip      is your kiss; make it a good one.</li>
<li>Now      for the test. Don’t wait too long before going in again. From the greeting      you receive you’ll know how well you’ve done. A nod is okay, a handshake      even better, but if they say your name, you’re in! Welcome to your new e-lationship! NORM!</li>
<li>Enjoy      the barley and hops of your labor. Here’s the fun part, unlike other      relationship taboos, an e-lationship should be polygamist in nature. Have      as many, e-lationships as you want, just remember to keep it alive with repeat      business, good vibes and a big tip goodnight.</li>

<p>Southern California nights &#8212; always the possibility of a regular evening turning into a crazy, bizarre, tequila filled escapade, and it always started with someone saying, ” let’s go to TJ,” aka Tijuana, Mexico.</p>

<p>Living in Maui such things seemed a thing of the past, until last Friday, as the words, “let’s go to Tia Juana’s,” left my lips and my youth flashed before my eyes. As anticipation built once again for the bursting flavor of tacos loaded with carne asada, cilantro, and my favorite salsa, I was whisked away to a familiar place.  Home.</p>
<p>In Irvine, California, there is also a Mexican restaurant named Tia Juana’s which was near the train tracks in an old converted warehouse, close to my home. It was known for great food, live entertainment and a unique special called a “train shot” shared by all tequila lovers. Whenever the train would rumble by, the rattling the windows would signal bottom&#8217;s up by a bar full of shot slammers.</p>
<p>Although Maui is a far cry from Mexico or Irvine, Tia Juana’s second location has added some spice to Kaanapali’s restaurant line up. But no one is resting on their laurels here. All aficionados know that any Mexican restaurant worth the salt rimming their margarita glasses has to make a great first impression, accomplished with that first margarita and complimentary chips and salsa.  To put TJ’s to the test, we tried a Ka’anapali Kick-Ass Margarita, a refreshing kick in the…you know what! Pineapple muddled with lime juice, agave nectar and  Serrano peppers, hand-shaken with premium Cazadores Reposado Tequila and served on the rocks easily passes muster for Mexican food lovers.</p>
<p>The spiciness of the cocktail opened up all my taste buds and was the perfect accompaniment to the basket of warm tortilla chips. Loading a generous serving of fresh salsa on a homemade crisp and popping into my mouth, my taste buds shot six shooters in the air.</p>

<p>We were just about to give up our basket of chips when our waiter, Aaron, recommended the Queso Fundido, a hot bowl of three cheeses roasted peppers and chorizo sausage served with warm tortillas and tri-colored chips. Fantastico!</p>
<p>As an entrée, we dined on my favorite, Carne Asada Tacos, and special menu items which I’ve never seen in Maui before, such as the Maui Cattle Company Steak Tampiqueno, a “Blackened Ribeye” carved in house, covered with Mexican spices and cooked to order. We finished it all off with Blanco Y Negro, TJ’s traditional flan baked over rich chocolate cake and topped with tequila caramel and fresh whipped cream. It was so sweet and moist we savored each bite. Robert, the General Manager of the restaurant, suggested we experience our dessert with a shot of Patron. Not wanting to offend, we happily obliged.</p>
<p>Between the great service and rustic, spacious decor,  an unencumbered and atmospheric pulse beat through the restaurant. The rhythm was shared by staff and management as they ensured everyone enjoyed their experience to the fullest.</p>
<p>After dinner we tried to justify hanging around a little longer to listen to the Carrol Brothers playing downstairs at Donovan Frakenrieter’s Margarita Bar, but an early morning was summoning me back to my crib. There will be a next time. Guaranteed.</p>
<p>I just hope they’ll start promoting “train shots” whenever the Sugar Cane Train rolls by.</p>

			<content:encoded><![CDATA[<p>While flying from Chicago to Maui yesterday, I realized why trends make their way to Maui more slowly than they do from LA to NYC. First of all, there is nothing like eleven hours on a plane to emphasize how far we are from everything. Secondly, who cares what’s happening elsewhere once you arrive in paradise?</p>
<p>After people light on this tropical splat of land in the middle of the ocean, we tend to quickly forget about the land from whence we traveled. People come to Maui to escape – hoping things will be different here. In Maui, those establishments whose novelty is somewhat old-fashioned, in the tropical isle sense, have always been the most popular. Think <a href="http://www.whatscookingmaui.com/restaurant-reviews/mamas-fish-house-paia-maui/" target="_blank">Mama’s Fish House</a> or <a href="http://www.whatscookingmaui.com/people/hot-bartender-peter-stanmeyer/" target="_blank">Hula Grill</a> or just start here:</p>
<p>Since everything old is new again, it’s not surprising that many purportedly new food trends are things that have been <em>de rigeur</em> in Maui all along. Community tables, mixed plates, locally sourced foods, farmer’s markets – decidedly dorky, homespun and hippie affected, Maui has always smiled in the face of cynics and fat cats who may have formerly scoffed at our relatively simple approach to culinary arts and life in general.<br />
That said, here’s a list of the top ten food trends – some that have always been big in Maui, along with a few mainland trends we’d like to see take hold locally.</p>

<p>Rather than one ponderous piece of pie suitable for table wide sharing (I am loathe to double dip once the first piece passes ‘round anyway) how about selling wee slices or dollops for a fraction of the price? Besides, minis are always fun.</p>
<h4>2)	Gourmet Bar Food</h4>
<p>Peter Merriman is already on to this trend, based on his <a href="http://www.whatscookingmaui.com/maui-dining-news/featured/maui-food-news-deals-dis-n-dat/" target="_blank">announcement of a Gastropub</a> in Kihei slated to open in 2010. Chef Ryan Urig will also be opening a new wine/tapas bar in Honokawai this year – it’s sure to be delicious knowing the Chef’s work at <a href="http://www.whatscookingmaui.com/restaurant-reviews/banyan-tree-ritzcarlton-kapalua-maui/" target="_blank">Banyan Tree</a>. Currently, <a href="http://www.whatscookingmaui.com/dining-deals/david-pauls-island-grill-deals/" target="_blank">David Paul’s Island Grill</a> offers a meaningful bar menu, as does <a href="http://www.ruthschris.com/Steak-House/6507/Lahaina/Maui" target="_blank">Ruth’s Chris</a> and the Four Seasons, Wailea. <a href="http://www.whatscookingmaui.com/dining-deals/alaloa-ritz-lobby-bar/" target="_blank">The Ritz Lobby Bar, Aleola</a> serves delectable pizza, salad and house specialties, but the biggest surprise this year might be the delightful al fresco dining experience at Ono, Westin, Kaanapali, which has a terrific tapas menu. Nearby <a href="http://www.whatscookingmaui.com/maui-events/umalu-anniversary-bash-hyatt-kaanapali/" target="_blank">Umalu at the Hyatt, Kaanapali,</a> serves what may well be the island’s best ahi poke pupu.</p>
<p>Although admittedly the tab rings in higher at those establishments serving upscale small dishes than it does at the typical sports bar, for the preponderance of delicious flavors packed into the “great with wine and drinks” dishes, gourmet bar dining is a worthy alternative to a fancy sit-down dinner. It also encourages more casual interactive conversation with friends, which is what bars and great food are all really about. We believe the two should not be mutually exclusive.</p>

<p>3. Salty Things – The Good, Bad and Ugly</h4>
<p>Food snobbery is so passé these days and thank goodness! WCM’s been rolling our eyes for a while now whenever we encounter menus stuffed with so many exotic ingredients it takes longer to read the description than it does to eat dinner. High time we got back to basics – like <a href="http://www.bakonvodka.com/">bacon flavored Vodka</a> and sardine sandwiches. No, seriously.  The LA Times reports that J. Walter Thompson, the ad agency that handles Kraft, Nestle and other food giants, has cited sardines and bacon as the next big thing. Come to think of it, I bought bacon flavored chocolate bars last year at the Honokawai Health Food store, of all places! Ahead of the trend&#8230;</p>
<p>Meanwhile on Maui, chewing the fat has always been considered good fun and essential local social behavior. Just ask Chef Rich Hinojosa at Westin’s <a href="http://www.westinmaui.com/cheftable.htm">Tropica restaurant</a>, who features a surprising and utterly thrilling little slab of seared salt pork as an appetizer. Sardines may make their way onto more menus as well, since they are low in mercury, high in omega-3 and very inexpensive. Until they do, I recommend kipper snacks with mustard sauce; great with eggs the morning after. Or poke, no matter.</p>

<h4>4)	Ethnic Co-Mingling</h4>
<p>Food Networks’ website lists one top trend as <strong>American; the New Ethnic</strong> cuisine. Rough translation &#8211;  a celebratory collaboration of all the flavorful and often disparate elements that make up our great American melting pot cuisine. Hawaii has long sported this trend, ever since the Plantation Days gave way to the venerable mixed plate, bento lunches, and potluck spreads made up of all that is wonderful from cultures around the world. Witness <a href="http://www.whatscookingmaui.com/restaurant-reviews/cane-taro-opens-whalers-village/" target="_blank">Cane and Taro’s</a> new menu which offers everything from pasta to poke to eggrolls. We’ll probably see more of that all American variety as restaurateurs stretch to sate every palate under one roof &#8211; or under one flag, as the case may be.</p>

<p>5)	Sustainability – Where Do We Even Start?</h4>
<p>From the shift from corn to grass fed beef,  to the broad availability of free range fowl and locally coddled eggs, Maui has been all over this trend for quite some time. Jurg Munch from Lahaina Grill, Peter Merriman of Duke’s and Merriman’s, James McDonald at I’o and Pacific`o, the Ryans (Luckey and Urig) of Pineapple Grill and Banyan Tree respectively, <a href="http://www.whatscookingmaui.com/people/bev-gannon-chef-businesswoman-extraordinaire/" target="_blank">Bev Gannon</a> of Joe’s Hali`imaile and the new Gannon’s in Wailea, all practice what they preach in terms of selecting ingredients sourced locally whenever possible. Which is why, although Ruth Chris’ steaks are super succulent, WCM often prefers the Ribeye from <a href="http://www.whatscookingmaui.com/restaurant-reviews/merrimans-kapalua-knows-the-secret/" target="_blank">Merriman</a>’s, sourced from Hawaiian grass fed beef. We predict the trend will only grow stronger as more and more patrons realize the ultimate benefit of dining on Maui grown products.</p>
<h4>6)	Wine! Papa’s Got a Brand New Bag</h4>
<p>Time to shift that paradigm, wine lovers! Where screw tops and box wines formerly reeked of inferiority, and guaranteed a headache, times have changed. The industry governed for so long by oppressive rules and regulations has finally been turned on its ear by technology. Even in the case of fine vintages, corks are being gradually replaced with more effective and available screw caps. Soon enough wine will be packaged in biodegradable plastic bottles as opposed to glass. Since plastic packaging (biodegradable or not) doesn’t do well for reds, wouldn’t it be great if restaurants or the local wine shop carried huge casks of wine sold by the carafe or fill-your-own containers, as they do in Spain? That would significantly cut down on packaging and cost.</p>

<p>Even if that&#8217;s a crazy idea for wine, Maui Brewing Company already has a similar option for selling beer. You can buy jugs of brew to go in recyclable, refillable containers at both their Kahana restaurant and the Lahaina Brewery. Check it out the next time you have a party. In general, WCM heartily supports the fill-your-own containers trend and would love to see more shops offering the option on Maui. Kula Lavender gives a free cuppa tea to those who bring their own cup. We think local coffee shops should follow suit. Who doesn’t prefer drinking coffee or tea from your own mug rather than a sorry little Styrofoam cup, eh?</p>

<p>We like to drink, we love to eat, so why not marry the two with vitamin enhanced, vodka based cocktails such as <a href="http://www.westinmaui.com/tropicabar.htm">Freddie Sconfienza’s  Dragonberry Bomb</a> , Winner at the First Annual Mixology Bartending Competition at Lulu’s,  Lahaina, Maui. The luscious berry rich drink is just one of many making a big splash on Maui’s bar scene. At <a href="http://www.whatscookingmaui.com/restaurant-reviews/bistro-casanova-kahului/" target="_blank">Bistro Casanova</a>, bartender supreme, Brandi, curates cocktails made with organically grown, hand harvested mint, basil and other fine upcountry herbs. Try <a href="http://malaoceantavern.com/menus.html#drink">Mala’s</a> delightfully fruity Sangria and you can see the makings of a trend toward lighter and healthier cocktail choices, many of which were also popular back when your dad sported a fake I.D. and David Cassidy hair.</p>
<h4> <img src='http://www.whatscookingmaui.com/wp-includes/images/smilies/icon_cool.gif' alt='8)' class='wp-smiley' /> Have Saucepan; Will Cook for Legal Advice</h4>
<p>Love to cook? Need some help around the house or the office? Another trend noted at the Food Network which has never left Maui is that age-old concept of “help me move and I’ll buy the pizza and beer.” Also known as “will work for food,&#8221; we are getting back in touch with the power of a home cooked meal.</p>

<h4>9)	Making Things Real</h4>
<p>My partner has insisted for some time that I’m a chef but I have vehemently resisted the notion, ungraciously correcting him each time he makes the claim. “No, I’m merely a good cook,” I counter since I know too many Chefs and believe me, I am not worthy. But recently when his young daughter bragged to a friend that I can make “anything taste good,” I realized that in the end, when it comes to food, isn’t taste all that matters? It’s encouraging to know that in a pinch I can make palatable whatever is available.</p>
<p>Think of it; anyone can make high-fallutin’ ingredients delicious – it’s the French who earned a culinary reputation by learning to transform tripe and tongue into desirable dishes. Contrast that with the Irish, who, content to leave good enough alone, suffer bad food jokes even to this day. (But the Irish are the world’s greatest story-tellers and humorists so they don’t care!) In any case, those local chefs who will continue to make all food taste great, working the best they can with what they have, will never have to worry about the economy or changing tides.</p>
<h4>10)	Nest Eggs – aka, Grow Your Own</h4>

<p>Whether a lanai herb garden or acres of fruit trees, everyone on Maui seems to be growing their own these days – vegetables and herbs, that is. Having had our noses pushed closer to the ground recently by the economy, here in the Garden of Eden with our year round sunshine and perpetual summer temperatures, there’s no excuse not to tend a garden. Whether for your personal use, to barter or trade with other farmers, or to sell outright, the time has never been more <em>ripe </em>for keeping things homegrown. Along with being good for your soul, it’s downright neighborly, nutritionally better for you, and environmentally superior. (Watch for WCM’s series on local growers in 2010.)</p>
<h4>11)	Continued Discounts, Coupons and Food Deals</h4>
<p>As reported in <em><strong>Specialty </strong></em><strong><em>Food News</em></strong>: Street food will become more popular in 2010, according to trade publication <strong><em>Eat In Eat Out</em></strong>. Supermarkets will continue to push discounts, and restaurants will expand use of their bargain menus. <strong>What’s Cooking Maui </strong>was actually born with the idea of tracking <a href="http://www.whatscookingmaui.com/?s=deals&amp;x=0&amp;y=0&amp;=Go" target="_blank">Maui food deals</a> and although we’ve expanded our content to include reviews, events, news and calendars, we expect the biggest driver to remain our exceptional expertise in ferreting out great food deals.
